Coconut Cranberry Cookies

If you've ever sailed UnCruise Adventures, you know it to be true that even the most self-controlled among us cannot resist the fresh baked daily goodness created in the kitchen.

The fresh baked plate of cookies, a highly anticipated afternoon ritual, can often be found magically appearing in the ship lounge. These delicious delights come in all shapes, colors and flavors but we decided to share the recipe for one of our favorites. The Cranberry Coconut Cookie. Try to consume in moderation ;)



Oatmeal cookies with chocolate chips, coconut, & cranberries

Yield 30 cookies

1 lb butter softened

2 cups sugar

1-1/2 cups brown sugar

4 eggs

2 tsp vanilla

4 cups all purpose flour

2 tsp baking soda

2 tsp salt

2 tsp cinnamon

1-1/2 cups chocolate chips

3 cups dried cranberries

3-1/2 cups oatmeal

1-1/2 cups coconut flakes

1-1/2 cups toasted pecans

Preheat oven to 350 degrees. In a mixing bowl blend softened butter and sugar together. Add eggs one at a time while blending. Then add vanilla.

In a separate bowl add all dry ingredients and mix together. Fold dry ingredients into butter mixture. Bake on parchment lined sheet pans for approximately 14 minutes.
