Happy Cinco De Mayo!

While our Baja season has come to end that doesn't mean we won't be celebrating this fifth of May in true Baja style!

Our plans for the evening include a delicious Southwest Quinoa Salad paired with a tasty Baja nectarine mint mojito. In case you want to join in on the fun, here are the recipes for both. Enjoy!

Southwest Quinoa Salad (Serves 6)

Southwest quinoa salad

3 c vegetable stock
1 c quinoa (red or white)
1 tsp cumin powder
1 tsp chili powder
½ c black beans, cooked
¼ c fresh spinach, chopped
¼ c frozen peas
¼ c corn kernels, roasted
¼ c green onions, diced
¼ c black olives, sliced
¼ c grape tomatoes, halved

Bring vegetable stock, quinoa, cumin, and chili powder to a boil. Cover and reduce heat to a simmer. Cook approximately 20 minutes, or until liquid is absorbed into quinoa. Transfer to a shallow container and cool completely in refrigerator.

Marinade
½ avocado
¼ c fresh cilantro leaves
1 tbsp Dijon mustard
2 tsp brown sugar
1 tsp cumin powder
2 tbsp fresh lime juice
2 tbsp apple cider vinegar
6 tbsp olive oil
Salt and pepper, to taste

For the marinade, place all ingredients, except the olive oil, into a blender. Mix on medium while slowly adding olive oil. Add salt and pepper to taste. In a large mixing bowl, combine all remaining salad ingredients, cooled quinoa, and marinade together. Serve chilled.

Nectarine Mint Simple Syrup
1 c white sugar
1 c water
3 large nectarines, sliced
25 mint leaves

Cook all ingredients on high. Bring to a boil. Remove from heat. Let sit for 2 hours. Strain out nectarines and mint.

Nectarine mint mojito

Nectarine Mint Mojito
3 lime wedges
10 mint leaves
1¼ oz Nectarine Mint Simple Syrup
1 scoop ice
1½ oz Bacardi Light
¼ oz Myers Rum
Soda Water

Smash (mull, not muddle) lime wedges, mint leaves and simple syrup in a pint glass to release oils. Add ice and Bacardri Light; shake well. Strain into Collins Glass full of ice and top with splash of soda water. Float the Myers Rum, and garnish with nectarine slice, sprig of mint.
