Spring officially begins tomorrow, March 20. That means the busy Alaska season is just around the corner. At this time of year, we are deep in spring yard work readying the fleet for a full summer of fun.
In October, I joined guests for a river cruise aboard the newest vessel in our fleet, the 88-guest S.S. Legacy. Sailing down the Columbia and Snake Rivers in the fall when leaves are changing color and weather is cool and crisp and sunny afforded all of us aboard grand scenery and ideal conditions for exploring, sightseeing and taking photos along the way.

This recipe comes from one of my best friends, Pastry Chef Cinamon Jaramillo. She makes this with a maple cream cheese frosting, but I've adapted it a little to a buttercream. The cake features a layer of pumpkin spice, zucchini and apple cinnamon layers, with a maple pecan buttercream; a fantastic blend of fall flavors and spices!
